Ingredients
1 tbsp coconut or avocado oil
1 tbsp curry powder
1/2 tbsp ground turmeric
Scotch bonnet pepper or red crushed pepper (to taste)
Sea salt ( to taste) (optional)
1 (13 oz) coconut milk
1 (15.5 oz) can; drain and rinse before using or 1 3/4 cups cooked chickpeas
Instructions
In a medium pan, heat coconut oil over medium heat. Add Angie’s
Truly Delicious Seasoning Original Blend. Reduce the heat to
medium-low. Add curry powder and turmeric stir for 2-3 mins.
Stir in the coconut milk. Add chickpeas, scotch bonnet pepper
(poke holes in pepper with a fork), and salt to taste. Bring the mixture
to a boil over medium-high, then return heat to medium.
Simmer coconut chickpea curry for about 15-20 minutes or until thickened.
